Thiers Issard, founded in 1884, is one of the few remaining companies to make true traditional French cutlery. For the last 70 years Thiers Issard has been forging each of their **** Elephant Sabatier knives using traditional techniques made by local craftsman. The French chef knife is lighter and thinner compared to a German knife, which causes less fatigue during use and creates more agile, precise cuts. The high carbon blade steel takes a razor edge easily and touches up in an instant making edge maintenance simple, and the red stamina wood handle is not only lovely, but resists bacterial absorption. Each **** Elephant Sabatier is the perfect combination of form, function, history and performance.

The 8” slicer is perfect for slicing proteins. The long blade will take care of the largest roasts and the thin profile aids in the cutting process. A thin slicer is standard issue in any kitchen that processes large quantities of protein and when the most detailed of cuts is required.

Carbon steel can rust if neglected. To avoid corrosion and rust, be sure to wash and dry your knife immediately after use. Leaving moisture or acidic material on the blade will cause corrosion. Every carbon steel knife will develop a blue grey patina, yellow or orange is rust. While carbon steel requires more care, the benefits of fine edges and quick honing are worth it.
