Kikuichi’s Kokaji series are completely hand forged by skilled makers in Sakai. The Shirogami 2 core laminated with SK steel blade is beautify ground with a convex taper creating clean cuts. The Shirogami 2 blade steel takes a very clean, high polished edge and can easily be touched up. Each Kokaji knife is hand engraved and comes with a saya.

The Kokaji Kiritsuke 210mm gyuto is a truly unique knife. The blade is completely hand forged giving each knife character and individuality. The deep choil leaves lots of room for the fingers and is slightly rounded (right hand) which makes using the knife for long periods more comfortable. The 210mm blade has a steady curvature up to the tip which will provide long, controlled slices and high mincing. Being able to both effectively push cut and mince with one knife is not always the standard, but with the Kokaji 210mm it is.
