Moss Cutlery’s SIMCO series was targeted towards the catering community. The knives are made for work but have an excellent fit and finish. The dark wood handle is held in place with nickel silver pins and a long, thin blade that makes slicing easy. Be sure to hand wash and thoroughly dry carbon steel knives after use. Interesting fact - Moss turned their honing rods into daggers for soldiers during the Second World War.
