The name “Sabatier” was created before copyrights were invented, so anyone can use the name to brand their product. Due to the lack of copyright, there are a lot of poorly made knives, and knives not made in France with the name “Sabatier”. This slicer is a true French Nogent Sabatier. The blade is thin and straight and will cut beautify. French knives sharpen very quickly making maintenance easy. The knife is seated stoutly in the handle, but is slightly off line from the handle. Not bent away from the handle resulting in uneven cuts pulling to one side, but slightly over rotated during instillation. Vintage handmade/assembled knives frequently have subtle variances in handles and blade straightness. If you don’t mind the handle rotation, you’ll get an excellent example of a true Nogent slicer. Be sure to hand wash and thoroughly dry carbon steel knives after use.
